As a woman and a busy mum, I really like tricks which make my life simple, stress-free, simple cleaning, and most importantly enjoy some fantastic food. I adopted it in my Jollof recipe along with other tomato-based sauces when looking to have a truly loaded with deep flavor flavor. Aside from that, it shortens the cooking time and makes cleanup of my stove top so simple as there's no splatter of curry stew everywhere. Also, it may be carried out beforehand, refrigerated or frozen and it will become handy for simple and quick weekday meals.

Plum Tomatoes or New tomatoes (blended)
Passata (optional)
Bay leaves
METHOD:
Use a heavy based pot, one which doesn't burn easily. The pot ought to be deep enough to contain the number of berries being simmered. There should be a third free area above the tomato mix, to allow space for bubbling when boiling.
I favor using plum tomatoes to chopped since they are tastier.
When simmering, do not COVER or STIR.
Depending upon the number of berries being simmered along with the size of the pot, your tomato paste could be ready within 20 minutes.
